How to choose
Cook the recipient in your head before you spend. Wagyu rewards a confident hand and punishes distraction — its richness means small portions and a hot, fast sear; send it to someone who will enjoy that ritual, not to a household that will grill it to grey. Lobster is the opposite gift: dramatic to receive, forgiving to cook, and happy with drawn butter and very little technique. If you are unsure of the cook, send the lobster. If you are sure, send the beef. Either way, send it to arrive a day early, not on the day — a centrepiece that lands late is a story nobody wants.
